Pineapple Upsidedown Pulled Pork Sliders on a Lazy NASCAR Sunday

Pork shoulder slowly braised in coffee and spices until fall off the bone tender and full of enticing familiar flavors, pulled into luscious tender morsels.

Fresh juicy pineapple and spicy red onion, simmered slowly with a touch of cinnamon, then blended to create a crisp sweet sauce just perfect for the rich pulled pork.

Fluffy fresh King’s Hawaiian Sweet Rolls, the perfect size for a slider, ready to stuff full of pulled pork and pineapple sauce…

Put them together and you’ll have Pineapple Upsidedown Pulled Pork Sliders. Easy to prepare on a day that requires more attention to NASCAR than cooking…

  Pineapple Upsidedown Pulled Pork Sliders

To prepare the Pineapple Upsidedown Pulled Pork Sliders you will need:

  • 3 1/2 to 4 Lb Bone-in pork shoulder
  • 1 cup hot coffee
  • 1/3 cup light brown sugar
  • 1 cup water
  • 1 Tbsp Kosher Salt
  • 1 tsp ground white pepper
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cumin
  • 2-3 dashes Tabasco Sauce
  • 2 packages of 12 King’s Hawaiian Sweet Rolls
  • Pineapple Upsidown Sauce (recipe follows)

Preheat the oven to 225° F.  Place the pork shoulder in a dutch oven with a lid.

Whisk the brown sugar into the hot coffee until dissolved, then whisk in the water and spices.

Pour the mixture over the pork roast, cover and place it in the oven. 

Braise for 7 hours undisturbed until the pork roast is just falling apart.

Remove the pork from the liquid and allow it to cool in a separate bowl.  Once cooled shred by hand discarding any bones and large pieces of fat.

Strain the braising liquid into a saucepan and simmer on medium low heat for 1 hour until the liquid is reduced by at least half.

Reheat the pork in the saucepan with the reduced braising liquid.

To make the Pineapple Upsidedown Sauce you will need:

  • 1 medium sized fresh pineapple, peeled, cored, and chopped into small pieces
  • 1 small red onion, chopped
  • 1 cup water
  • dash ground cinnamon
  • 1 tsp Kosher Salt
  • 1 tsp corn starch

Combine the pineapple, red onion, water, cinnamon, and salt in a saucepan.  Simmer on medium heat 25-30  minutes until most of the water has evaporated.

Remove from heat and stir in the corn starch.  Blend well with a food processor or blender until smooth.  Cool completely before serving.

To assemble the slider:

Slice the King’s Hawaiian Sweet Rolls in half and spoon a generous helping of Pineapple Upsidedown Sauce on the bottom of the bun.

Top with the coffee braised pulled pork.

(Servings= 20-24, Prep Time= 15 mins, Cook Time= 8 hours)

Lounge in front of the TV and watch the end of the race, only getting up to make another slider.

The girls had a lazy day of NASCAR too (I think Kelli is an Earnhardt Jr. fan and Morgan likes Harvick)…
