Being a little nervous about tasting this murky green concoction, I decided to wade into the Louisiana Swamp Scum Hot Sauce slowly.
After opening the cap and taking a little sniff, I was surprised by the appealing smell of this greenish goo.
I drizzled a drop of the Swamp Scum on the end of my finger and then cautiously touched it to the tip of my tongue…Ok, thats not so bad, in fact it’s pretty darn good.
The smoky Cajun flavor and tangy vinegar are an award winning combination, and this hot sauce also packs a lot of heat.
The nice folks at Mossy Bayou Foods also sent me a bottle of Cajun Chow Chow which is made with green cayenne peppers, onions, garlic, salt and spices.
It has a similar flavor to the Louisiana Swamp Scum Hot Sauce and packs the same wicked kick, but it does not taste smoky.
A little bit of Cajun Chow Chow goes a long way. I’ve been enjoying a small spoonful on grilled sausages when I want to wake up my taste buds.
The salt free Bayou Blend Seasoning is my favorite of the three products I received.
Whatever the “other spices” are, they sure do taste fantastic. The Bayou Blend Seasoning has that distinctive zesty Cajun taste you would expect from “the flavor of Cajun country.”
I decided to make pork meatballs seasoned with the Bayou Blend and then rolled in crushed peanuts just before deep frying…
Here is the recipe.
To prepare Mossy Bayou Blend Crispy Meatballs you will need:
- 1 pound lean ground pork
- 2 Tbsp Bayou Blend Seasoning
- 2 green onions, green part only, chopped
- 1 small bell pepper, cored and chopped
- 1 ear fresh sweet corn, kernels removed
- 1 Tbsp Kosher salt
- 1 1/2 cups roasted salted peanuts, chopped
- Peanut Oil for deep frying
- 1 cup sour cream
- Several dashes Louisiana Swamp Sum Hot Sauce
Preheat deep fryer to 350° F.
Mix together the pork, Bayou Blend Seasoning, green onions, bell pepper, sweet corn kernels, and salt.
Roll 1 Tbsp of the meat mixture into a small meatball (18-20 total). Spread the chopped peanuts on a plate, them roll each meatball in the nuts until well coated.
Deep fry six meatballs at a time, for 4-5 minutes until golden brown (with a 160° F internal temperature).
Drain the crispy meatballs on paper towels and sprinkle with more Bayou Blend Seasoning.
Serve hot or cold with sour cream and several dashes of Louisiana Swamp Scum Hot Sauce.
