Cooking-Outdoors.com Recipe – Grilled Bacon Wrapped Habanero Cheddar Stuffed Garlic Sausages
Baseball season is upon us and this is the perfect recipe for the grill. Grilled Bacon Wrapped Habanero Cheddar Stuffed Garlic Sausages will be just what you need when you’re firing up your grill for the game.
The best part is you can put this together in just a few minutes. Hope you enjoy them!
- 1 package of Garlic Sausage
- 1 package of Habanero Cheddar cheese
- 2 – 4 strips of good smoked bacon

Heat up your grill to about 350°F, place a cast iron pan on the grate and partially cook your bacon.

You want a half done constancy – still needs to be flexible so don’t walk away from the grill. This should take about 5 – 8 minutes. Remove bacon and place on some paper towels to drain and cool off.

Next slice a pocket in each sausage – don’t split it in half or cut through the bottom. You’re making a pocket for the cheese. Now slice the cheese into 1/4 inch wide slices and stuff them into the pocket you made.

Take your half cooked bacon and split it in half lengthwise. Use two split slices to wrap around the sausage in a criss-cross fashion.
Pin the ends with tooth picks so the bacon doesn’t unravel! I highly recommend you pin the bacon in place or it will unravel (I didn’t the first time I made these and it did).

Place your prepared sausage on the grate cheese side up. Cook for about 10 -15 minutes until bacon is done to your liking.
Indirect or Direct cooking heat? Direct heat will give you a crispy bottom which I liked. Indirect heat will give you and even crisping of the bacon. Your choice but both ways are just too good!

These will go well with a toasted bun or just eat them plain. Try adding some grilled corn on the cob, baked beans and your favorite drink. Ball games just don’t get better than this!
