I just love drinking a cup of chai spiced tea in the morning…

There’s something about the spicy sweet flavor of chai that is soothing, a little “ying” to start my day.

I just love eating crispy bacon in the morning…

There’s something about the smoked pork flavor of bacon that puts a smile on my face, a little ”yang” to start my day.

What would happen if I bring together the ying and the yang?  It should be a perfect match, funny how opposites attract.

Bite of bacon…chew…swig of chai tea…swallow = YUM!

The sweet chai has hints of vanilla, cinnamon and cloves that taste incredible with bacon.

Hmmm…is it possible to bring these perfect flavors together in a recipe?

Luckily I have a bottle of finely ground Chai Spice from The Spice House, a jar of honey, and some thick sliced bacon to experiment with.

I’ll start by baking the bacon on a broiler pan until just crispy, and most of the fat is rendered…

Next, I’ll drizzle the bacon with honey and sprinkle on the Chai spice…

Then I’ll cook it little longer, until the chai flavors have time to meld with the honey and bacon…

The sticky enticing bacon needs to cool awhile, until a crunchy candy shell forms…

The aroma and flavor of the Chai Bacon Candy is irresistible!  I have nothing left to do but chew on it and smile smile smile…
