Fresh bratwurst, slowly braised in beer, topped with caramelized onions, and plenty of your favorite mustard for dipping of course!
Certain to please the guests at your Super Bowl party or great for a family dinner. Simple to prepare and even easier to cook, a culinary respite from the complicated meals prepared over the holidays.
I served mine with Root Beer Mustard, which added a tangy sweetness that perfectly complimented the onions and meaty brats.
To prepare the Beer Braised Bratwurst with Caramelized Onions you will need:
- 2 large yellow onions, halved and sliced thin
- 1/2 cup extra virgin olive oil
- 2 Tbsp unsalted butter
- 1 tsp kosher salt
- 1/2 tsp fresh ground black pepper
- 1 package 5-6 fresh bratwurst
- 1 bottle or can of dark beer
- Plenty of your favorite mustard (I used Sprecker Root Beer Mustard)
In a heavy skillet (enamel cookware preferred) heat the olive oil and butter over medium heat. Add the onions, salt and pepper, then stir to coat all of the onions with the oil and spices.
Stir the onions frequently while cooking, and reduce the heat if they begin to brown. They should cook about 45 minutes until very soft and a light yellow color
In a large skillet, add the brats and the beer. Turn on the heat to medium high and bring the beer to a slow simmer.
Braise the brats for 15 minutes then turn and cook for another 15 minutes. Remove them and drain on paper towels.
When the onions are just caramelized, move them to the side of your skillet and add the bratwurst. Brown the sausages, cooking for 3-5 minutes on each side.
Portion 1-2 brats per serving, top with plenty of onions and a side of mustard.

This looks incredible! Never thought to use beer… makes my tummy growl
Thanks Melody, beer adds a great flavor to the brats. I git the idea while eating out in Milwaukee, seems to be the only way to cook a sausage there.
